After years of traveling and searching for authentic BBQ in Costa Rica (one that requires a delicate balance of the right woods and rubs) and not finding it, Sean Murray, a pit master from Chicago steeped in the art and science of barbecue, had a realization: Costa Rica may have no BBQ, but it has an incredible ingredient basket to work with. And so it began.
After countless trials to perfect recipes that were artful yet mindful of indigenous ingredients, Jungle Q was born. The result? Traditional Texas-style BBQ reinvented, and smoked with tropical hardwoods. Coffees and guava come to life, with equally wonderful twists on sides of coleslaw, drop biscuits, and Costa Rican gallo pinto, using beans and rice from the soulful south of the USA.
